Ahh I love this time of the year where bright green and freshness is on the menu! There’s now plenty of fresh mint growing in my garden (and everywhere else as it’s spreading nicely!) so it’s time to share one of my favourite quick-to-put-together recipes with you:
4 medium tomatoes, chopped in bite-sized chunks
6 green onions, chopped
1/2 cup fresh mint leaves, chopped
1/4 cup fresh lime juice
2 tsp sugar
1/4 tsp chili powder
Combine chopped tomatoes, green onions and mint in a large bow. In a smaller bowl, mix together the lime juice, sugar and chili powder. Add to tomatoes and stir gently. Serve at room temperature.
Very easy and deliciously refreshing on a hot summer day!
