I tried a new olive bread recipe today and Success!! For once, I did not change one thing on the original recipe, and believe me, that in itself is very difficult for me! But I thought, let’s give it a chance, and then I’ll make some improvements. The result was very satisfying as a friend and I finished one loaf before it was able to cool down…… Next time, I’ll add a pinch of salt, I thought the salty brine of the Kalamata olives would be enough but not: there was just a pinch missing. I’ll also pat dry the olives hoping for them to mix better in the dough. But overall, a winner. And I will be baking it this summer in my wood-fired oven to share with the people of Brighton!
